Health Benefits of Vegetables

Root vegetable soups using carrots, pumpkin, squashes and parsnips are a great way to add health giving fibre and antioxidants such as vitamins C, vitamin E, beta-carotene and zinc. These nutrients help to reduce inflammation in the body and support healthy immune function.  

Top tip: Make sure you add onions to meals when you can. Onions contain 25 different types of flavonoids, potent antioxidants which have been researched for their anti-inflammatory properties and positive effects on disease prevention including cardiovascular disease, diabetes and cognitive decline.

To really boost the anti-inflammatory and immune boosting effects of your soup, as well as adding lots of flavour, add some gentle spices such as cumin, coriander, turmeric and ginger. 

Ginger has been extensively researched for its anti-inflammatory, antioxidant and anti-cancer properties. It works in a similar way to cox-2 inhibitors, a class of pain killers also know as Non-steroidal anti-inflammatory drugs. Don’t just take our word for it – Click here to find out more! 

Top tip: If you love turmeric and ginger then why not try making some ginger tea using fresh root ginger steeped in hot water and maybe add some lemon juice and honey to taste.

Turmeric can also be used to make a spicy warming latte using either cow’s milk or plant milks such as coconut or soy. There is an abundance of research on the anti-inflammatory and immune boosting properties of Turmeric which are attributed the active ingredient curcumin which it contains. Interested in finding out more?
